Product Description
Starch is boiled and saccharified under high pressure, then fermented and distilled to produce alcohol. Yeast fermentation belongs to anaerobic fermentation, during which anaerobic respiration is carried out. In this process, complex biochemical changes occur. Not only starch and dextrin in the saccharide mash are hydrolyzed by amylase to produce sugar, but also proteins hydrolyze by aspergillus protease to produce peptides and amino acids. Some of these substances are absorbed by yeast, while others are fermented to produce alcohol and carbon dioxide.
